  • 14 oz TOMATO DICED, DRAINED
  • ½ c SALSA
  • 3 Tbsp TOMATO PASTE
  • 4 PEPPERS GREEN, FRESH
  • 1 PK VIGO YELLOW RICE
  • 1 lb BEEF GROUND, BULK, RAW, 90% LEAN
  • ½ c ONIONS FRESH, CHOPPED
  • ½ tsp SALT
  • ¼ tsp PEPPER BLACK, GROUND
  • 1 Tbsp WORCESTERSHIRE SAUCE
  • ¼ cup WATER
  • ¼ cup WATER

Instructions

METHOD:

  • Sauté onions in butter until translucent, brown ground beef.
  • Prepare Tomato Sauce, diced tomatoes, salsa, Worcestershire sauce, salt, pepper, water, and tomato paste.
  • Cut each pepper in half lengthwise; remove core.
  • Prepare yellow rice according to package directions.
  • Combine cooked rice, ground beef, mixture stir to combine. DO NOT OVERMIX.
  • Fill each pepper 3/4 full of beef mixture. Place filled peppers in baking dish.
  • Pour ¼ cup water around peppers.
  • Cover baking dish with aluminum foil.
  • Bake about 1-1/2 hours at 350 F. or until peppers are tender
