- 14 oz TOMATO DICED, DRAINED
- ½ c SALSA
- 3 Tbsp TOMATO PASTE
- 4 PEPPERS GREEN, FRESH
- 1 PK VIGO YELLOW RICE
- 1 lb BEEF GROUND, BULK, RAW, 90% LEAN
- ½ c ONIONS FRESH, CHOPPED
- ½ tsp SALT
- ¼ tsp PEPPER BLACK, GROUND
- 1 Tbsp WORCESTERSHIRE SAUCE
- ¼ cup WATER
- ¼ cup WATER
Instructions
METHOD:
- Sauté onions in butter until translucent, brown ground beef.
- Prepare Tomato Sauce, diced tomatoes, salsa, Worcestershire sauce, salt, pepper, water, and tomato paste.
- Cut each pepper in half lengthwise; remove core.
- Prepare yellow rice according to package directions.
- Combine cooked rice, ground beef, mixture stir to combine. DO NOT OVERMIX.
- Fill each pepper 3/4 full of beef mixture. Place filled peppers in baking dish.
- Pour ¼ cup water around peppers.
- Cover baking dish with aluminum foil.
- Bake about 1-1/2 hours at 350 F. or until peppers are tender
