  • 14 oz TOMATO DICED, DRAINED
  • 3 Tbsp TOMATO PASTE
  • 4 PEPPERS GREEN, FRESH
  • 3 quarts WATER BOILING
  • 1 c. RICE WHITE, LONG GRAINED
  • 1 lb BEEF GROUND, BULK, RAW, 90% LEAN
  • ½ c ONIONS FRESH, CHOPPED
  • 2 tsp GARLIC MINCED
  • ½ tsp SALT
  • ¼ tsp PEPPER BLACK, GROUND
  • 1 Tbsp WORCESTERSHIRE SAUCE
  • ¼ cup WATER
  • ¼ cup WATER

Instructions

METHOD:

  • Prepare Tomato Sauce,
  • Cut each pepper in half lengthwise; remove core.
  • Place peppers in boiling water. Return to a boil; cook 1 minute. Drain well. Set aside for use in Step 6.
  • Prepare rice.
  • Combine cooked rice, ground beef, onions, salt, pepper, garlic, Worcestershire sauce and water with ½ cup tomato sauce. DO NOT OVERMIX.
  • Fill each pepper with 3/4 cup beef mixture. Place filled peppers in roasting pans.
  • Pour ¼ cup water around peppers in each pan.
  • Pour remaining sauce over peppers in each pan. Cover pans.
  • Bake about 1-1/2 hours at 350 F. or until peppers are tender
