STUFFED GREEN PEPPERS (GROUND BEEF)

- 14 oz TOMATO DICED, DRAINED
- 3 Tbsp TOMATO PASTE
- 4 PEPPERS GREEN, FRESH
- 3 quarts WATER BOILING
- 1 c. RICE WHITE, LONG GRAINED
- 1 lb BEEF GROUND, BULK, RAW, 90% LEAN
- ½ c ONIONS FRESH, CHOPPED
- 2 tsp GARLIC MINCED
- ½ tsp SALT
- ¼ tsp PEPPER BLACK, GROUND
- 1 Tbsp WORCESTERSHIRE SAUCE
- ¼ cup WATER
- ¼ cup WATER
Instructions
METHOD:
- Prepare Tomato Sauce,
- Cut each pepper in half lengthwise; remove core.
- Place peppers in boiling water. Return to a boil; cook 1 minute. Drain well. Set aside for use in Step 6.
- Prepare rice.
- Combine cooked rice, ground beef, onions, salt, pepper, garlic, Worcestershire sauce and water with ½ cup tomato sauce. DO NOT OVERMIX.
- Fill each pepper with 3/4 cup beef mixture. Place filled peppers in roasting pans.
- Pour ¼ cup water around peppers in each pan.
- Pour remaining sauce over peppers in each pan. Cover pans.
- Bake about 1-1/2 hours at 350 F. or until peppers are tender
