  • 3 lb BEEF GROUND, BULK, RAW
  • 6 oz BREADCRUMBS
  • 1 tsp SALT
  • ½ tsp PEPPER BLACK, GROUND
  • ½ tsp GARLIC POWDER
  • 1 Tbsp MILK NONFAT, DRY
  • ½ c WATER
  • ¼ c CELERY FRESH, CHOPPED
  • ¼ c ONIONS FRESH, CHOPPED
  • ¼ c PEPPERS GREEN, FRESH, CHOPPED
  • 2 EGGS WHOLE,
  • 1 c JUICE TOMATO, CANNED

Instructions

METHOD

  • Combine beef with breadcrumbs, salt, pepper and garlic; mix until well blended.
  • Reconstitute milk.
  • Add milk, celery, onions, sweet peppers, eggs, and tomato juice. Mix lightly but thoroughly. DO NOT OVERMIX.
  • Place meat mixture into loaf pan. Using a convection oven, bake 1 hour 15 minutes at 300 F. Skim off excess fat and liquid during cooking.
  • Let stand 20 minutes before slicing

1lb ground beef, plus 1 lb ground pork plus 1 lb ground veal may be substituted for all ground beef.
